Wowza! It's July!
I hope you all had a fabulous 4th of July. I absolutely love the 4th of July. It feels like SUCH a vacation. It's a holiday with no expectations. Do what you want to celebrate the freedoms this country has to offer. Most often it includes basking on a beach with my sidekick (my full bottle of SPF 50+ sunscreen). I hate sunburn!!!!!!!! But I do love a nice hot day on the river.
My puppy got to meet the Mississippi this year. Somehow it became tradition to spend the 4th on the Mississippi river. As soon as we can put the boat in the water, we are chillin' and EATING. Plenty of chips and dips are available. This year we got creative a brought a big bowl of what I can only describe as guacamole meets "cowboy caviar" (midwest for black bean salad). Kudos for Vegan Huggs for the inspiration. We used tortilla chips as spoons to polish this off. The cilantro/lime combination totally makes this dish a hit. I say "dish" with liberty ( no pun intended...ok, a little intended.) This can be made as a side salad, or as a dip. It all comes down to how small you slice up your produce and how juicy your tomatoes are.
Basically, you are in the clear to make it all the time and eat it in all ways. Tomatoes, corn, beans, limes, cilantro and AVOCADO. You can't go wrong! I'm convinced it would make a KILLER taco topping. Throw that atop marinated grilled tofu or maybe jackfruit!? top with some finely sliced red cabbage or radishes for some crunch. So many options. Now I'm hungry.
Andra would like you to note: Fresher is always better. Take the time and avoid canned beans. Opt to make your beans in a crockpot overnight or during your work day. Not only will you be really proud of yourself, but you will save yourself some money and the earth from dealing with those empty cans.
Have a farmers' market nearby? There is a PARTY going on there too. Get there and grab the freshest freaking tomatoes available. Even better, fresh sweet corn?? Throw those suckers on the grill for a treat everyone will go crazy for.
Fiesta Bowl: Bring the Party to the Party.
2 Avocados - halved and scored
2 Cups Black Beans or 2 Cans
2 Cups Chopped tomato. Making a dip? use big ol' juicy tomatoes. Making a salad? Try Heirloom mini tomatoes ( I like Trader Joe's )
1 Bunch of Cilantro - to taste
1 Bag of Frozen Corn (approx. 2 cups) Thawed
1 Small/Medium Red onion sliced finely. Green onions are also delicious!
Juice of 3 limes
2 Tbsp Extra Virgin Olive Oil (EVOO)
1 tsp pure agave syrup (optional)
1 tsp Garlic Powder
1/2 tsp Chipotle Chile Powder, chili powder ok too.
1/4 tsp Cumin
1 tsp coarse sea salt to taste
Prepare all your produce besides the avocados. Chop it all up. big chunks, small chunks, however you'd like it. I prefer small chunks so I get nice even bites.
Toss chopped produce in a large bowl.
In a separate small bowl, whisk together dressing ingredients.
Pour the dressing over the produce and toss until coated. Add scored avocado and gently stir in to avoid mushing the beautiful avocado, the precious avocado.
Enjoy with your favorite chips or as a side salad.
