Dill Chickpea Salad Wrap with Cucumber Slaw

When inspiration hits, it hits. 

 

 

 

Well, last night it freaking hit! Scavenging for something cool, something fresh and please oh please something to help clean out my fridge. 

 

 

My partner will frequently describe our fridge akin to a garden. Not because he thinks there are things literally growing (at least... I HOPE not), but because there has been a plethora of fresh veggies on ever shelf and in the drawers thanks to Growing Lots Urban Farm. This CSA experience has been amazing!! Unless you like to keep you fridge looking less like the produce section of your grocery store. 

 

I don't care, I like it like that. #summatime 

 

Anywho, the wraps. It all started when my email *dinged* at me with a recipe from Adventure.Gather.Eat. with a simple slaw recipe. Fresh dill. Cucumber. Cabbage. All things I had growing, I mean sitting, in my fridge!

 

Chickpea salads are so easy and oh so versatile. I'm telling you I have a "recipe", but maybe I mean more of an inspiration. You can hardly ever screw this salad up. Let that be empowering! 

 

If you haven't already, you may notice that I am a big fan of changing recipes up, not following a recipe completely, and making lots of substitutions based on my stock at home... What?? I don't like to waste things! 

 

I hope you enjoy this recipe as much as I did last night. This batch makes three monster wraps. 

 

Cucumber Cabbage Slaw with Fresh Dill

  • 1 small cabbage thinly sliced - 

  • 1 cucumber peeled & julienned - yeah, I didn't know what that meant for a while either. Basically make long stripes of it. OR grate it if you are feeling less fancy. 

  • 3 Tbs fresh dill OR 1.5 Tbs dried

  • 1/3 cup white wine vinegar

  • 2 Tbs honey - Local if you have it, great for combatting allergies!

  • Salt & Pepper to taste

 

Combine all ingredients into a large bowl, mix all together and let sit in the fridge while you prepare the chickpeas.

 

Dill Chickpea Salad with Capers

  • 2 cans chickpeas/garbanzo beans mashed or processed

  • 1/3 cup organic mayo, plant-based mayo, or avocado + lemon juice

  • 2 green onions chopped

  • 1 Tbs chopped capers with a splash of the juice. Pickles also would work just fine... I simply had capers in my fridge. 

  • 2 juicy fresh tomatoes (optional and lovely) Chopped 

  • Sprinkle of dill

 

Mix all together and put atop your wrap of choice with the slaw.
